
Process of making ‘Desi Cow Ghee’ from Butter
Step 1: Add Desi Cow Butter in Kadai/Vadasatti and let it to melt in medium flame.
Step 2: There will be thick foam forming on the surface.
Step 3: You will see that thick white foam changes to slight yellow in color.
Step 4: Stir continuously, you will see the bubbles emerging from thick foam. And the milk solid starts to curdle.
Step 5: Keep stiring. Here, milk solids will stay at the bottom and the ghee will be clear like mirror. You can see the color changes to golden yellow.
Step 6: Add salt at this stage.
Step 7: Add drumstick leaves followed by salt. (You can also use curry leaves instead of drumstick leaves).
Step 8: Stir thoroughly and remove drumstick leaves once it attains crispy stage.
Step 9: Finally, switch off the stove. you can see the thick milk solids stayed at bottom and the aromatic ghee turned clear and golden yellow.
Step 10: Filter it and store it in a silver container or in a glass container.
Step 11: Add Nattu sarkarai/Jagger powder and Roasted channa dal to fried crispy drumstick leaves
Step 12: Mix it together. And enjoy eating the healthy and aromated snack. (You can eat the fried crispy drumstick leaves as it is without adding nattu sarkarai/jaggery powder and Roasted channa dal).
Step 13: You can also eat those milk solids with hot steamed rice.
